Recipe: Massaged Kale Salad
One of the many greens growing in my garden is kale. It is a hardy green and grows abundantly, which makes it necessary to come up with some good recipes for it so it doesn't go to waste.

One of my favorite recipes to make with my kale is Massaged Kale Salad (yes, I thought that sounded funny too!). If you have some kale in your garden you are wondering what to do with or you have been wanting to try a good kale recipe to start incorporating it into your diet more, this is the perfect recipe. I, like many people, was a little skeptical about kale but trust me you will really enjoy this recipe. You can make it as your main dish or use it as a side.

Massaged Kale Salad
5-6 large stalks of curly kale
1 large avocado
Lemon juice
Cayenne pepper
Salt and pepper to taste
Remove the stalks from the kale, chop and place in a large bowl. Massage the kale until it is soft. Mash 1 avocado and stir into the kale. Squeeze half a small lemon over the kale. Add a sprinkle of cayenne and salt and pepper to taste.
