I love creative recipes that are also healthy. When you are trying to eat healthier it is easier to do so when you get creative and mix it up a little. One of my favorite creative and healthy recipes is Cauliflower "Rice". When I first heard about cauliflower rice I wondered how cauliflower could look like rice. I gave it a try anyway and wow if was so incredibly tasty and so easy to make.

1 head of cauliflower
Red, orange and green bell peppers
1 cup Salsa
3 cloves garlic
Salt and pepper to taste
Chop the onion and peppers. Heat the olive oil in a large saucepan and add the onion and peppers and chopped garlic. Cook for about 5 minutes.
Cut the cauliflower into small florets and place in a food processor. Pulse for about 30 seconds to 1 minute.
Chop the zucchini into cubes. Add the cauliflower rice, zucchini, salt and pepper to the saucepan, cover and cook on low for about 20 minutes, or until cauliflower is soft.
Remove the lid from the saucepan and add the salsa. Gently fold and serve.
